To celebrate the end of the year, Midi-Minuit presents a program centered on sharing and discovery. In addition to the pop-up Wine Bar, we have created a new format: three “Soirées Vigneronnes” led by Fabrice Langlois, head sommelier at Ducasse Baccarat.

Exclusive events to meet passionate winemakers and taste their products in an intimate setting.

Exclusive encounters around wine

Designed as convivial interludes, the wine evenings are guided by the expertise of our sommelier, Fabrice Langlois. Their format is simple and accessible: at each event, three glasses are paired with three tapas from the bar’s menu. The dishes, crafted by our chefs Christophe Saintagne and Robin Schroeder, complement the wines to create a coherent and balanced dialogue.

At the heart of these evenings is exchange: invited winemakers take the time to share their journey, explain their cultivation and aging choices, and answer questions. This availability allows guests to grasp the personality of each wine more deeply and better understand what it expresses. The bar’s space encourages closeness between guests and winemakers, creating evenings meant for savoring and conversation.

Graeme et Julie Bott

17 November – Graeme & Julie Bott: The precision of the Northern Rhône

In the warm atmosphere of the bar, the first evening highlighted a young couple of winemakers, Julie and Graeme Bott. Their path is unusual: he is from New Zealand, she is French, and neither comes from a winemaking family. Yet in 2015, they decided to launch their own estate. In less than ten years, their domaine has established itself as a rising reference thanks to a rigorous, precise approach. Their vineyards stretch across several emblematic appellations—Côte-Rôtie, Condrieu, Saint-Joseph, as well as the slopes of Seyssuel—on granite soils that define the identity of the Northern Rhône. The Bott style is built on the pursuit of balance: refined, harmonious wines with great aromatic purity.

The evening of 17 November offered a valuable moment of exchange between guests, Fabrice Langlois, and the winemakers. A perfect opportunity to discover this new generation defending a contemporary yet respectful vision of the region, while enjoying the food-and-wine pairings served throughout the night.

December 1st – Château de Beaucastel & Pierre Gerbais: Southern Rhône & Champagne

This second encounter offers a rare dialogue between two regions with very distinct identities: the Southern Rhône and Champagne. It highlights how southern power and Champenois freshness can respond to each other through food-and-wine pairings created for the occasion.

Owned by the Perrin family since 1909 and now led by the fifth generation, Beaucastel is iconic and internationally renowned. The estate occupies a central place in the history of Châteauneuf-du-Pape wines, notably thanks to its distinctive feature: blending the thirteen grape varieties permitted by the appellation, a complex choice that contributes to the exceptional quality of its wines. Beaucastel produces powerful reds with notes of sweet spices and remarkable aromatic depth, built on the structure typical of Southern Rhône wines. Their ability to age harmoniously makes them some of the most frequently cited and fascinating references of the region.

Pierre Gerbais – the pure expression of Pinot Noir from Champagne
Located on the Côte des Bar in the small village of Celles-sur-Ource, the Gerbais estate is now run by Aurélien Gerbais, who continues the family’s work with a precise and contemporary approach. Each cuvée highlights a single grape variety, in a deliberately pedagogical spirit. Gerbais champagnes are known for their clarity and freshness. Pinot Noir, very present in this part of Champagne, reveals itself in clean, digestible wines with delicately fruity aromas.

Priced at €130, this evening offers a journey from one universe to the other, exploring what distinguishes these two regions as well as what brings them together: meticulous work, deep attention to terroir, and a constant pursuit of precision.

Quinta do Noval

Quinta do Noval: A journey through the Douro Valley and its historic ports

To close this series of encounters at the heart of Ducasse Baccarat, Bar Midi-Minuit welcomes one of Portugal’s most emblematic estates: Quinta do Noval, founded in 1715. Established in the Douro Valley in the country’s hinterland, the estate is renowned for its Port wines, some of which are among the most sought-after. Quinta do Noval Ports stand out for their aromatic richness: black fruits, spices, cocoa notes, and the natural sweetness of the fruit. The wines and ports of Quinta do Noval reflect the same mastery of aging and depth that tell the story of the estate.

The visit from the Quinta do Noval team offers an opportunity to discover or deepen one’s understanding of these emblematic wines of Europe’s viticultural heritage. The evening is priced at €100.

A cuisine designed for wine, by Christophe Saintagne & Robin Schroeder

Each of our three Soirées Vigneronnes is accompanied by tapas from the bar’s menu. Chefs Christophe Saintagne and Robin Schroeder create dishes conceived for a natural dialogue with the wines served. Their work on textures, cooking methods, and aromatic balance offers a coherent experience that highlights the wines as much as the food.

In a small group, with moments for exchange and a rigorous selection carried out by our teams at the Ducasse Baccarat restaurant, these Wine Evenings were conceived as privileged moments. To enjoy this oenological experience in the heart of the Maison Baccarat, it is recommended to reserve a table at the bar. The Ducasse Baccarat pop-up Wine Bar offers an elegant setting in which to discover prestigious estates, where art de vivre and attention to detail reach their highest expression.
