The Chefs
Three Generations, One Shared Vision
Under the guidance of Alain Ducasse and working alongside Christophe Saintagne, Florian Gravelle has created the menu for Restaurant Alain Ducasse Baccarat. Formerly a chef instructor at École Ducasse, he has a deep understanding of the Maison’s culinary philosophy.
This collaboration gives rise to French cuisine that is both refined and generous, built on perfectly mastered cooking techniques, expertly crafted sauces, exceptional ingredients and pure, distinct flavours.
“I focused on the very essence of Alain Ducasse’s cuisine, seeking timeless flavour combinations,” explains Florian Gravelle.
The experience
A cuisine of precise technique, in perfect light
At the table, the guiding philosophy is one of living classicism, rooted in tradition yet never bound by it. French culinary heritage provides the foundation, while vegetables, acidity, bitterness and the fragrances of the Riviera bring freshness, vibrancy and light. Sophistication lies in the precision of each gesture, revealing the depth and complexity of every flavour.
This approach comes to life in Jardin de Provence, a sun-drenched composition in which delicately marinated raw courgette meets Taggiasca olives, toasted pine nuts and a tomato and pepper sorbet. A cuisine rooted in French tradition, illuminated by the Mediterranean and expressed with a contemporary sensibility.
Designed by Aliénor Béchu and her team at Volume ABC, the dining room is a cabinet of curiosities in its own right. Raw oak screens by sculptor Jean-Guillaume Mathiaut contrast with a poetic rain-filled sky, where the original ceiling fresco meets extraordinary oversized drops of hand-blown crystal. Conceived by the interior designer and specially crafted by Baccarat’s artisans, these crystal creations catch the light, casting delicate shadows across the floor and tables. A captivating interplay of reflections brings the dishes themselves to life.
