Ducasse Baccarat is a living space, a multifaceted venue where art and gastronomy are expressed and combined freely. To celebrate the approaching end of the year, we have created an entirely new concept: an ephemeral wine bar on the theme “Autumn–Winter,” open every evening from 6 PM to midnight.

Fabrice Langlois’s selections, between discoveries and rarities

It is Fabrice Langlois, sommelier of Ducasse Baccarat, who designed the event alongside Bernard Neveu, corporate sommelier of Ducasse Paris. The two envisioned several experiences within the ephemeral wine bar, guided by a single principle: an uncompromising balance between product accessibility and gustatory excellence. Fabrice Langlois created a menu called “Rarities & Discoveries,” which he will evolve throughout the event according to his inspirations.

Each offering features two wine options to accompany dishes: a “gem,” the sommelier’s favorite that deserves to be known and tasted, and a fine wine, ranging from grand crus to classified growths. To serve these exceptional bottles, the Coravin system is used to preserve the wines’ integrity while maintaining their tasting qualities.

The Soirées Vigneronnes: exceptional encounters

To enliven the “Autumn–Winter” wine bar, three special evenings are organized. They showcase winemakers who will be present at Bar Midi-Minuit to guide and comment on the tastings.

On November 17, Fabrice Langlois welcomes the Graeme & Julie Bott estate with a selection of Crozes and Côtes-Rôties; Châteauneuf-du-Pape will be featured on December 1 with Château de Beaucastel & Pierre Gerbais; and on December 19, the Douro Valley comes to Paris with Quinta do Noval, producers of wines and ports.

For all three dates, the schedule is the same: from 6 PM, guests can interact with the winemakers and enjoy three glasses paired with three matching tapas. The evenings on November 17 and December 19 are priced at €100 each, and €130 for the December 1 tasting.

A gastronomic experience à la carte

On our bar menu, Chef Alain Ducasse’s gastronomic signature is reflected in every dish, with a focus on quality ingredients, freshness, and authenticity.

These values are upheld by the chefs of the Ducasse Baccarat restaurant, Christophe Saintagne and Robin Schroeder, who offer simple yet refined cuisine year-round. For the three Winemaker Evenings held in November and December, the chefs will serve small “tapas-style” plates designed to enhance each glass of wine.
