From September 24 to October 5, the Midi-Minuit bar counter at Ducasse Baccarat welcomes the Breton duo Xavier Pensec and Mika Kobayashi from the Hinoki sushi restaurant in Brest for an exceptional omakase pop-up.

The Art of Sushi

Established in their Hinoki restaurant in Brest since 2008, Xavier Pensec and his wife Mika Kobayashi practice the traditional Edomae sushi art—crafted directly in front of the guest.

They work exclusively with selected fish, applying Japanese techniques of cutting and aging so that each bite achieves perfect harmony of texture, temperature, and seasoning, in pursuit of the renowned UMAMI, the fifth taste so cherished in Japan.

Humble yet exacting, they offer an omakase experience of excellence, fully immersing guests in the art of sushi.

An Exclusive Collaboration

From September 24 to October 5, the duo takes over the Midi-Minuit bar at the invitation of Alain Ducasse, presenting a 10-course menu served at the counter. Prepared before your eyes, the Edomae sushi combine the precision of Japanese technique with the freshness of Breton fish, in a choreography of accuracy and harmony.

Alongside white and oily fish sushi selected in collaboration with Arthur Viot of the eponymous, sustainable, and innovative fishmonger, guests will also experience creations by chefs Alain Ducasse, Christophe Saintagne, and Robin Schroeder, including the Lobster granité with Baccarat rose, for a distinctive, harmonious, and immersive experience.
