At Maison Baccarat, we believe in bringing different forms of craftsmanship together. Beneath the cascade of crystal, in this exceptional setting recognised by the Prix Versailles 2025, and within the intimate atmosphere of the Midi Minuit bar, gastronomy, creativity and the art of hospitality come together every day.
With Signatures, wine becomes an integral part of this experience. From September to December 2026, we invite you to discover a different French wine appellation each month through three wines selected by Bernard Neveu, Corporate Head Sommelier of Maison Ducasse Paris.
Available by the glass, carafe or bottle, or brought together in a tasting flight, these wines offer a monthly opportunity to explore the diversity of French terroirs and the distinctive craftsmanship of the winemakers behind them.

September: discovering Sancerre
In September, we launch Signatures with an appellation whose diversity can be experienced within just a few kilometres. For this first tasting, Ducasse Baccarat brings together three terroirs from the Sancerre region: Bué, Chavignol and Crézancy-en-Sancerre.
Among our selections, Vincent Pinard’s Charlouise 2023 challenges expectations. Made from Pinot Noir, this red Sancerre offers a striking contrast to the two outstanding white wines featured in September’s selection: Pascal Jolivet’s Le Clos du Roy 2025 and Henri Bourgeois’ La Côte des Monts Damnés 2022.
Set alongside these two whites, the red wine offers a fresh perspective, revealing just how varied the expressions of a single appellation can be.

October: exploring Saint-Émilion through three wines from Château Angelus
At Ducasse Baccarat, where craftsmanship takes centre stage, we recognise in certain winemakers a shared commitment to excellence and gastronomy. In October, Signatures highlights a selection from a single estate: Château Angelus.
A name well known to Saint-Émilion enthusiasts, Château Angelus is presented through three wines: N°3 d’Angelus 2023, Carillon d’Angelus 2018 and Château Angelus 2017.
While they share a name and a common winemaking heritage, each wine has its own blend, vintage and distinctive character. We invite you to discover their subtle differences.

November: the diversity of Châteauneuf-du-Pape terroirs
In November, Châteauneuf-du-Pape takes centre stage at Ducasse Baccarat through three distinct expressions. The appellation owes much of its diversity to its soils: alongside the famous rounded pebbles are sandy and limestone soils, complemented by a wide variety of grape varieties and winemaking styles.
Our selection reflects this diversity with Domaine de Cristia’s Classique 2022, Julien Masquin’s L’Intimiste 2023 and Château de Beaucastel 2022.
Two red wines are presented alongside a white: L’Intimiste reminds us that Châteauneuf-du-Pape cannot be defined by a single colour or by the familiar image of its rounded pebbles alone.
Enjoyed together over a meal, these three wines reveal the full range of the appellation. Our sommeliers introduce their distinctive characteristics and guide guests through the tasting experience.

December: three expressions of the Côte de Beaune
In December, Signatures concludes its journey in the Côte de Beaune, with a selection designed as a tasting in three stages. Antonin Guyon’s Savigny-lès-Beaune Les Goudelettes 2022 opens the experience with a red wine, followed by two whites: Joseph Pascal’s Puligny-Montrachet 2023 and Louis Latour’s Corton-Charlemagne 2019.
One red, two whites, three distinct origins: an invitation to take the time to compare rather than taste each wine in isolation. Return to a previous glass, revisit your impressions and discover the subtle contrasts between them.
This final selection perfectly captures the spirit of Signatures: bringing different wines together in a single experience to better appreciate what makes each one unique.
